Bacteriophage MS2

  • Description: Bacteriophage MS2, commonly known as MS2, is an icosahedral, positive-sense single-stranded RNA virus that infects Escherichia coli and related bacteria.
  • Health Risk: MS2 is used as a surrogate for pathogenic waterborne viruses due to its similarities in size, structure, and resistance characteristics to human enteroviruses. Contaminated water poses health risks, making testing crucial.
  • Regulation: Compliance with the drinking water specification IS 10500 mandates MS2 Phage testing to detect viral contamination.

E. coli 0157:H7

  • Description: Pathogenic E. coli strains, particularly the O157:H7 serotype, are associated with severe human infections and produce harmful toxins.
  • Health Risk: Infections with E. coli O157:H7 can lead to severe gastrointestinal illness, potentially causing fatalities. Contamination of food materials, particularly beef and vegetables, is of serious public health concern.
  • Regulation: FSSAI regulations require the absence of E. coli O157:H7 in fruits and vegetables to meet food safety criteria.

Cronobacter Sakazakii

  • Description: Cronobacter sakazakii, also known as Enterobacter sakazakii, is a group of gram-negative bacteria capable of survival in dry conditions.
  • Health Risk: Rare but lethal in infants, Cronobacter infections can be serious for individuals with compromised immunity or the elderly. It often leads to sepsis or severe meningitis.
  • Regulation: FSSAI mandates the testing of Cronobacter sakazakii in infant formulae and infant milk substitutes to ensure safety.

Listeria Monocytogenes

  • Description: Listeria monocytogenes is a pathogenic bacterium found in various environments, capable of growth under refrigeration.
  • Health Risk: Listeriosis, caused by this bacterium, can lead to serious complications in pregnant women and newborns. Contaminated foods, including raw milk, cheese, and poultry, can pose severe health risks.
  • Regulation: Regulatory standards demand that products are free from Listeria monocytogenes to meet safety criteria.

Clostridium Perfringens

  • Description: Clostridium perfringens is a Gram-positive spore-forming bacillus associated with gastrointestinal infections.
  • Health Risk: Clostridium perfringens can cause a range of gastrointestinal illnesses, particularly when associated with improperly heated or reheated foods.
  • Regulation: Regulatory standards govern the presence of Clostridium perfringens in various food products to ensure food safety.
